NATIONAL SALAD MONTH

Wednesday, May 9th: Lettuce and ‘maters and dressings … oh my! May is NATIONAL SALAD MONTH, the perfect dish for these warming spring and summer days. The Association for Dressings and Sauces has sponsored this month for twenty years. Twenty years! And I’m just learning about it this month?

reports that “A research study in the Journal of the American Dietetic Association found that salad eaters tend to have higher intakes of key nutrients, including vitamins C, E and folate.”

Their web site adds, “And research shows that eating salad vegetables with added fat, such as full-fat salad dressings, actually promotes the absorption of lycopene, alpha- and beta-carotenes, all of which aid in the fight against cancer and heart disease, according to a study in the American Journal of Clinical Nutrition.”

(also by the Association for Dressings and Sauces), there’s pages and pages of salad recipes. Here are two that piqued my taste buds.

Black Bean and Corn Salad
Number of Servings: 6

1 14.5 oz. can corn- drained
1 15.5 oz. can black beans- rinsed and drained
1/2 C. chopped celery
1 C. chopped tomatoes
1/4 C. green onions- sliced
1/4 C. minced cilantro
1/2 C. ranch salad dressing or lite ranch salad dressing
1/2 C. your favorite salsa

Drain corn and put in a salad bowl. Drain black beans, rinse and put in bowl. Add celery, tomatoes, onions, and cilantro; mix well. Add salad dressing and salsa; mix well.

Prep Time:10 minutes

Give Thanks Salad
Number of Servings: 4 entree size, 8 side salad size

10 oz. bag mixed greens, romaine pieces or lettuce of choice
1 C. diced turkey
1/2 C. Craisins (dried cranberries)
1 C. herbed stuffing mix-dry from bag, not cooked
1/4 C. chopped walnuts
1/2 C. chopped or shredded carrot
1/2 C. chopped celery
1/2 C. raspberry walnut vinaigrette dressing

Mix all ingredients in large bowl. Toss with dressing.
